Blueberry cobbler

Blueberries are my favourite summer fruit. Ever since I was a little kid, I've always gone gaga for blueberries, yet, for some reason I don't bake with them very often. Summer baking around here is usually dominated by strawberry shortcake or peach pie. But this simple blueberry cobbler might just change that. It lets the taste of summer blueberries shine, with just a little sugar and lemon to sweeten and brighten up the flavour. Served topped with a scoop, or two, of vanilla ice cream it's summer perfection!!

Ingredients
3 cups fresh blueberries
3 tbsp white sugar
juice of 1/2 a lemon
2/3 cup all-purpose flour
1/4 tsp baking powder
1 pinch salt
1/2 cup butter, softened
1/2 cup white sugar
1 egg
1/2 tsp vanilla extract

Method
Preheat oven to 375 degrees F.

In an 8 inch square baking dish, or cast iron skillet, mix blueberries, sugar, and lemon juice. Set aside. 

In a small bowl, sift together flour, baking powder, and salt. Set aside.

In a medium bowl, cream butter and sugar until light and fluffy. Beat in the egg and the vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of the filling as possible.

Bake in preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling.
