Best Ever Banana Muffins
My son loves bananas. Every morning when he gets up he immediately runs to the kitchen shouting 'nana, nana, nana'! So we always have tons of bananas on hand for him, and we inevitably end up with a few that are past their prime. These banana muffins, an old family recipe passed on to me by my mother-in-law, really are the best ever. Easy to whip up and super yummy! My kiddo loves these banana muffins almost as much as he loves bananas!
Best Ever Banana Muffins
Ingredients
3 large (ripe) bananas
3/4 cup white sugar
1 egg, slightly beaten
1/3 cup melted butter
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 1/2 cups all purpose flour
Method
Preheat oven to 375°F.
Mash bananas. Add sugar and slightly beaten egg.
Add melted butter.
Sift dry ingredients together. Add to wet and stir until just mixed through.
Fill muffin cups 3/4 full. Bake for 20 minutes.
Makes 12.
Note: This recipe cannot be doubled, if you have 6 overripe bananas, make two batches.
